Ingredients
  

For the Chimichurri Sauce:

  • 1 cup fresh parsley finely chopped
  • 3 garlic cloves minced
  • 2 tablespoons red wine vinegar

  • 1/4 teaspoon red pepper flakes adjust to taste
  • 1/2 cup olive oil
  • Salt to taste

For the Pizza:

  • 1 ball of pizza dough store-bought or homemade
  • 1 cup sweet cherry or grape tomatoes halved
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese optional
  • Fresh parsley or oregano for garnish

Instructions
 

Step 1: Prepare the Chimichurri Sauce

  • In a small bowl, combine the parsley, garlic, red wine vinegar, oregano, and red pepper flakes.
  • Slowly add the olive oil while stirring to emulsify the sauce.
  • Season with salt to taste and let the sauce rest for 15–20 minutes to allow the flavors to meld.

Step 2: Prepare the Pizza Dough

  • 1. Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
  • 2. Roll out or stretch the pizza dough on a floured surface until it reaches your desired thickness.
  • 3. Carefully transfer the dough to a sheet of parchment paper for easy handling.

Step 3: Assemble the Pizza

  • 1. Spread a thin layer of the chimichurri sauce evenly over the pizza dough, leaving a small border around the edges.
  • 2. Arrange the halved sweet tomatoes evenly across the pizza.
  • 3. Sprinkle the mozzarella cheese over the tomatoes, followed by the Parmesan cheese, if using.
  • Step 4: Bake the Pizza
  • 1. Transfer the pizza (on the parchment paper) onto the preheated pizza stone or baking sheet.
  • 2. Bake for 10–12 minutes, or until the crust is golden and the cheese is bubbly.
  • 3. Remove the pizza from the oven and let it cool slightly.

Step 5: Add Finishing Touches

  • 1. Drizzle additional chimichurri sauce over the pizza for extra flavor.
  • 2. Garnish with fresh parsley or oregano before slicing and serving.
